Situated at an altitude of more than 8,300 feet, it has a continental climate, which is known for its long, hard winters and short and very hot summers – this makes the ham curing process here different from other regions.
It is said that even in the Middle Ages, the Duke of Béjar demanded products from Guijuelo, and that this jewel of the Salamanca pantry even appeared on the Roman chronicles.
When in 1880, Guijuelo received the railway, what was an almost artisanal production was transformed into a prosperous industry. Iberico Hams and Sausages from Guijuelo could reach the last corner of Spain growing in fame and prestige until today. Nevertheless, that success has not changed our work philosophy.
