The Julián Martín Group has own livestock and farms, as well as a slaughter plant and several specialized production facilities located in Guijuelo (Salamanca) and the Alentejo region (Portugal). In this way, the control of the complete production cycle is maintained, guaranteeing the quality and homogeneity of the elaborations.

Currently the Group has a workforce of more than 200 employees and markets its products through prestigious customers at a national level (for more than 40 years, the main Iberico supplier of El Corte Inglés) and in 28 countries on five continents.

Why Guijuelo?

“Even since its foundation in 1933, Julián Martín has been based in Guijuelo, located in the southeastern part of the province of Salamanca, in the foothills of Béjar and Gredos mountain ranges. This area has a traditional link with the world of Ibérico, producing more than 70% of the total national production”

Situated at an altitude of more than 8,300 feet, it has a continental climate, which is known for its long, hard winters and short and very hot summers – this makes the ham curing process here different from other regions.

It is said that even in the Middle Ages, the Duke of Béjar demanded products from Guijuelo, and that this jewel of the Salamanca pantry even appeared on the Roman chronicles.

When in 1880, Guijuelo received the railway, what was an almost artisanal production was transformed into a prosperous industry. Iberico Hams and Sausages from Guijuelo could reach the last corner of Spain growing in fame and prestige until today. Nevertheless, that success has not changed our work philosophy.

In Julián Martín we respect traditional techniques and flavors although we have incorporated the latest technologies to also offer a 100% guarantee to the consumer.
